What I Ate:
Mediterranean Chicken with Cous Cous, Peas, & Yogurt Sauce
Ingredients
1-1/4 cups large prepared cous cous
2 tbsp low sodium chicken broth
1-1/4 lbs chicken breast tenderloins
2 tsp ground coriander
2 tsp curry powder
1 tsp paprika
1/2 tsp garlic powder
1 tbsp light olive oil
1/2 cup frozen peas
1/2 cup Greek yogurt
2 green onions, chopped
1 tsp lime zest
juice of 1 lime
Directions
Prepare cous cous so it’s nice and fluffy. Stir in the chicken broth and turn the heat to low. Toss in the frozen peas just to take the chill off. Meanwhile, heat olive oil in a skillet to medium heat. Mix together the spices and sprinkle over chicken tenderloins. Once the pan is hot, place in the hot pan and cook on each side for a few minutes on each side until cooked through. To make the sauce, stir the yogurt with lime zest, juice, and onions. Serve the chicken over hot cous cous and peas and top with the greek yogurt sauce.
Aren’t they adorable?! They certainly don’t look too thrilled about having their picture made. This snuggle situation explains why Weezy is often in this chair when I get home–the one and only chair in my house she is not supposed to sleep on. These two love to watch TV together and snuggle after supper.

Weezy never looks too thrilled in pictures unless I say “walk first” and Nick actually liked the cous cous “stuff” as he called it best! However, I think they both hate when I take their pictures.
